I prefere the nonselfbooting way since it lets you save a lot of cdrs.
whats needed:
-2cdrs
-quake's ID1 folder
-radquake
-demomenu or dchakker
download demomenu/dchakker from http://homebrew.dcemulation.org
and burn it to the 1st cdr. this one will be used as a bootdisc.
download the radquake files and burn a new multisession disc using nero.
use following dir structure:
[cd]
/1st_read.bin
/quake/id1/ <= put the PAK files from your PC quake here
/quake/modname
/quake/modname2 <= put your mods here
Then boot your demomenu/dchakker cdr, swap in your multisession cdr,
refresh the view and start 1st_read.bin.

well, the 1st cdr can be used as a bootdisc for ANY kind of dc application and you can always put a new version of radquake, mods or other dc programs on the 2nd cdr. just use nero's multisession feature.
A CDR has a capacity of 700 megs Quake+RADquake files need ~50 megs selfbooting the cdr needs ~20 megs! this means you waste over 600 megs when you create a selfbooting quake disc. So multisession IS more safety.
Another big advantage of using multisession is that you can always correct your burning errors (incorrect directionary system, wrong files, etc)
Ok, I don't have to force somebody to do it the way I do
If you still want use ONE selfbooting Quake cdr... I've heard there were SBIs of RADQuake. Ask Ian Micheal or TheDumbAss they might know more (I don't use SBIs for the reasons I told above)

All you need to run RADQuake from the original install CD is the pak files.
To get the files off the CD you have two options...
If you have a really old copy of Quake then the pak files will be easily visible just from looking at the cds contents. Just drag/drop as needed.
If you have a more modern copy with a real installer then your kinda screwed. You'll have to install it to a PC somewhere then get the pak files from the installation.
I'm with Moi on not selfbooting. If I did selfboot I'd have used hundreds of cds on the dc versions of quake and the various tests I've done... ( rather than the 50 or so I have still used anyway)
If you really want to selfboot then I'd probibly just use an SBI.
