I wouldn't bother with "With Sympathy", unless you're looking for Brit-synth-pop (I like the album, but I also consider Erasure one of my top 25 bands)
Twitch is a little harder-edged than With Sympathy, and is kind of similar to NIN's Pretty Hate Machine (a little less heavy than that, though, and it's still got a bit of the Brit-synth-pop vibe)
Dark Side of the Spoon is just a disaster. It's way too obscure for my tastes. Granted, Ministry is one of my top three favorite bands of all time, so I still own it and listen to it, occasionally, but it's definitely not one I'd recommend to anyone trying to get into Ministry.
Animositisomina and Houses of the Mole are both half-decent, but not spectacular.
That's funny. I wouldn't consider Automatic for the People or Monster to be older R.E.M. records. In fact, Monster is where I initially parted ways with R.E.M., because I really didn't like it. Out of Time had one or two good songs, but it wasn't amazing. Automatic for the People had some great songs on it, but the few singles that were released off it were so over-played, I got tired of the whole album.Also, I really like the older REM records, especially "Automatic for the People", "Monster" and "Up". Regarding the 80s stuff you've bought I still need to give them the time these records would deserve.
You really should invest some time in the early R.E.M. records - they are so much better than anything released in the nineties and beyond.
