Out of my mind: Christian Bale is one of those actors that surprised and impressed me more than once or twice.
My favorite however is Klaus Kinski
He's a genius and a brilliant actor. He made like hundreds of shitty b-movies but you actually can watch and enjoy them, just because of his presence.

Aguirre - The Wrath of God is one of my favorites, next to Nosferatu which you've already mentioned.
Others with Kinski that I can recommend would be Woyzeck and Fitzcarraldo. Among those without Kinski that I enjoyed watching would be Lessons of Darkness (from 1992) and The Wild Blue Yonder (from 2005). Herzog also made a great "documentary" of his work with Kinski called My Best Fiend.
Most of his recent works like Grizzly Man or Rescue Dawn I haven't seen yet but looking forward to. I have to say that I don't expect that much tho.
I've heard good things about Julian Donkey Boy, where Herzog's playing the main character's father. I got the DVD but have yet to find the time to watch it.

Christopher Walken makes a movie good. I like his style.
Anyways I thought Patrick Stewart was a great actor. I always thought his skills as an actor where far above everyone else's when he did Star Trek Enterprise series. He has experience with plays and more serious work that shows in his movie and tv performances.
My all time favorite actor to pick on is Keanu Reeves who as everyone knows wrote the book on acting. I should say re-wrote the book on acting. Why he doesn't have a multitude of oscars is beyond me. I mean AL Gore got one.
