Does anyone know if there is a Linux CD/DVD burning app that can automatically span a large number of files over multiple CDs/DVDs?

I don't know of a burning app that does it, but you could use an archiving program like tar to create a multi-volume archive with the appropriate volume size (for tar, see the -M and -L options).
