To be quite honest, I never really got into PlayStation during the first generation; I was still very much enthralled with SNES and Genesis games at the time, and 3D didn't intrigue me very much until it was more refined in the "current" generation (which, yes, I do count as starting with DC).
Most of the games I like for PSX are only because they're console ports of PC games that are getting to the point where they won't work on modern computers any more (such as Duke Nukem and Descent). There are only four original PSX titles I can think of, and one of them is available in superior form on Dreamcast:
-Hydro Thunder (on DC)
-JetMoto 2
-Medievil
-Castlevania: Symphony of the Night (one of my five all-time favorite games, and the ONLY one on that list for PlayStation)
Everything else failed to catch my attention; it was either available in equal/superior form on other consoles (fighting games for PSX were largely really bad ports, for example), or just not of interest (as I said, I had a very limited interest in 3D until the technology was more refined...I especially hated the "texture wobble" you got with a lot of PSX games).

I never thought I would live to see the day when somebody would list Sled Storm, Medievil and Vigilante 8 as 'the best' anything ^_^

Great lot of games still i doubt people have really played 5000+ to know if they like them all or not. Ive only ever played 400 and some thing.

COLIN MCRAE RALLY 2.0 ( To me the best rally game on the system there are many other good one's)
I will not list every game i happen to be a ps1 collector so i bore you all.

LEGEND OF MANA ( Finshed it enjoy parts of it prolly better then most on a lot of systems i enjoyed it which counts to me)
LEGEND OF DRAGOON ( very much underrated 4 disk game by sony)
START OCEAN 2 ( this is a great game own a ps1 just for it much better then the snes version yet retains it's charm)
SAGA FRONTIER ( hard to get into once you do it's great more adult in a way)
SUIKODEN 1 ( I really enjoyed this i thin much under rated as well)
SUIKODEN 2
TALES OF DESTINY ( just ok but as a rpg fan at the time i enjoyed it)
GRANDIA ( Really nice i like it better then ps2 version 2. it's better some people think it's better on saturn not really the case i own both. )
CHRONO CROSS ( this is really cool if you can find it)
XENOGEARS ( only got this game this year it's very good)
VANDAL HEARTS 1 ( like shining force and i love that)
