The LED is write indicator and the resistor is needed because a LED has almost no internal resistance and will burn up without it. Should work fine without them, but I haven't tested.

Some games (but not a lot) use it for the filesystem - There is a list somewhere. I'd like to see that list, because it would break Sega API-rules (not to talk about common sense) to do something with those blocks. Besides using them as normal if you have maked them as not in use of course, but all...

No need to wonder. There is no such product and nevere where. There are less than a handfull known HDD adapters build by homebrew people.I wonder if there's anywhere where those still exist
