Translate whatsshenmue starting from the english translation

Translate whatsshenmue starting from the english translation

Hi, I want to translate what's shnemue into italian. I found the english translation on romhacking. I extract .exe file of the translation and I find this:

How can I edit the .text file and translate this into italian?
